2 healthy crock-pot meals for a busy schedule!
With summer coming to an end and fall around the corner, it's a great time to start some meal prep, (especially some delicious stews!), before life gets busy with back to school, sports seasons, extracurricular activities etc. For my husband and me, the fall can get busy with work during the day and coaching in the evenings. We love being busy, however we also want to live a healthy and balanced lifestyle, which includes eating well. Without some planning and organizing, it can be tough to eat healthy. That’s why I decided to take a Saturday afternoon to do lots of baking and crock-pot meal prep! This meal tastes delicious and is almost completely wheat, sugar and dairy free (just watch what tomato sauce you use)!
Stew Times Two Recipe:
- 2 sweet potatoes
- 1 cauliflower
- 1 stalk of celery
- 6-8 carrots
- 1 onion
- 2 tomatoes
- 1 pepper
- 1 clove of garlic
- 1 tbsp rosemary
- 1 can of ‘Basil and Tomato’ pasta sauce
(OR substitute it with strained tomatoes and add basil!)
- 1 family size pack of stewing beef
- Add just a bit of water to it when you toss it in the crock-pot!
Chop everything up, split and mix them into 2 freezer Ziploc bags, toss them in the freezer and pull 1 out when you need it. Thaw for 24 hrs and cook on LOW for 7-10 hrs in the crock-pot (or HIGH for 5-6 hrs). And enjoy!!
